The chart below shows the season for each variety. The "season" for a variety does not necessarily represent the harvest dates, rather the gray squares represent the approximate weeks when the variety is at its best and is likely to be available after it has been harvested. You will notice that some varieties, such as Beacon, have very short seasons while others, such as Golden Russet, have much longer seasons. Some varieties actually improve in the weeks following harvest.
